Recipe - Drop biscuits

I am a Southern girl.  I love comfort food, hospitality, saying y'all.  I also like to speak English correctly and do not like country music.  Did I blow your mind?

Anyway, being a Southern girl means I know how to make biscuits in my sleep.  It's a right of passage.  You make the dough without measuring anything, roll it out, cut the biscuits and bake them.

However, Handsome Hero prefers his biscuits to be dropped.  Not on the floor, silly!  I mean that instead of rolling, cutting, and placing perfectly shaped circles on a cookie sheet, you skip all of that and drop the dough by the spoonful.  Something was always wrong, though.  They weren't bad, but the texture was never quite perfect.

Last week, by accident, I made the perfect drop biscuits.  The ingredients are the same, but the proportions are different.  Here is the recipe.

Ingredients
2 cups all purpose flour
2 t. baking powder
salt
1/2 cup unsalted butter, cold
milk

Directions
Preheat the oven to 475 degrees.

Mix your dry ingredients in a bowl. 


I don't have a measurement for the salt, but it's about this amount.  How's that for precise?


Slice the butter into cubes before adding.  Use a pastry blender to cut the butter into the dry ingredients.  I have heard that you can use two knives if you don't have a pastry blender {which is the tool Ella is using in the picture below}.
 

Mix until the butter pieces are the size of a pea.


It's time to add the milk.  Start with 1/4 cup, and add a few tablespoons at a time until the dough is sticky.  This dough is wetter than a regular bicuit dough, which is the secret to making drop biscuits.

Drop the dough by spoonfuls onto a cookie sheet or pizza stone.  You could also use a scoop. I didn't think of doing that until just now.... 


Put these on a rack about six inches from the heating element.  Bake until golden brown, about 12-14 minutes.  Please excuse the state of my oven.

  1. One of my friends in NC taught me that since drop biscuits are messier to cut open to fill with jam, you can just spread the jam onto the flat underside! Less mess!

    And, BTW, if you're ever into a mood of wanting to show a northern girl how to REALLY make southern biscuits, I'm all for the tutoring. 'Cause, man, I've tried before and FAILED. (Bisquick drop biscuits are my friend)

    And on that subject, if you know how to make GOOD biscuits n' gravy, my DH would be forever grateful if anyone could teach me how to make the gravy delicious and not flour-y tasting.
