Recipe - Sausage balls

My mom used to make these for parties when I was growing up.  We always got really excited for them.  They are SO yummy, and only four ingredients!  I still make them for parties, but we also like them for brunch, "breakfast for dinner" nights, or my new favorite, as an alternative to grilled cheese with tomato soup {recipe coming soon}.

Ingredients:

1 log of Italian sausage

2 cups Bisquick

1 lb. sharp cheddar cheese

hot sauce

Yeild:

35 large balls, or more if you make them smaller

Directions:

Preheat your oven to 350 degrees.

Combine all ingredients except hot sauce either by hand or in your mixer.  Squirt on your favorite hot sauce to taste.

To take a sample of your dough, make a small patty {I promise it's a small patty - this skillet is only five inches} and cook it.  Add more hot sauce if needed. 

Once you're satisfied, roll the raw dough into balls and place on parchment paper on a rimmed pan.  Bake for 20-25 minutes.

While I was cooking these, Handsome Hero was reading to the kids.  How cute are they?

They used the couch cushions as rooms in their "house."  I guess this was the reading room.  I don't know if you can tell, but Jack's book is upside down.

Place sausage balls on paper towels to drain and then serve.

Notes:

1.  If you're going to make this recipe for a party, make them smaller and adjust the time. These were two to three bite balls, a bit big for party food. 

2.  These freeze very well.  If you know you're going to freeze them, don't brown them quite so much, and then when you're ready, taken them out of the freezer and finish them off in the oven.

3.  Though you can't tell from the picture above, we do work with Ella on her manners.  Really, we do!

Things I'm thinking about today

Here are some random thoughts I have been thinking for no reason at all.  That's what makes them random.

Why do I cry at Folgers commercials?  I never used to cry at that stuff.

Handsome Hero taught me how to roll my earphones so they don't unravel and break.  I always wondered how people did that, and now I'm part of the club.

Jack gives me a dirty looks recently.  What did I do to him?  Just feed him and clothe him and make him put back that piece of candy ... oh.

I have been into Pavaroti in a major way this week.  I can't get enough of that operatic genius.  I also have been strangely drawn to Harry Connick, Jr.'s Christmas album.  Weird.

Ella likes classical music.  I hope it makes her smarter.

I need to go on a date.  I haven't had a date with Handsome Hero since our anniversary.  I NEED a date!

The kids want to hold hands all the time.  I hope the affection lasts forever.

Why don't the kids see that whiny voices never acheive their aim?

Jack sincerely needs a haircut.  It's amazing how long and curly his hair is.

I am going to go play with my kiddos now.
